baking bread

From the Polynesian Cultural Center. Sorry, I missed the actual demonstration so I can not clarify the directions for you. Some of you make bread. Maybe you can clarify for me?

Tahitian Coconut Bread

2 Cups fresh grated coconut
4 Cups flour
2 tsp baking powder
1 1/2 Cups sugar
1 1/2 Cups water

Combine coconut, sugar and water. Blend flour and baking powder together. Mix all ingredients to a doughy texture adding a little flour as needed so it is not too sticky. Wrap in aluminum foil and bake in oven at 350 for 1 hr to 1 1/2 hrs. Makes 5 loaves. Enjoy!

Bread is nice. Moist, somewhat fluffy and sweet but falls short of cake-sweet.

Questions:
1) does it have to be freshly grated coconut?
2) do you preheat the oven?
3) what is 'too sticky'? (stop that)
4) regular flour?
5) is it 1 hour or 1 1/2 hours cooking time?!
